300 grams ripe Elderberry
300 grams Rock candy
1 Vanilla bean
1 small Cinnamon stick
700 milliliters white Rum

Preparation steps

1.

Remove the elderberries from the vine. Discard any green berries. Rinse the ripe berries and drain well. Mix with half of the candy sugar, the split vanilla bean, and the cinnamon stick in a saucepan. Bring to a boil, stirring often.

Cool, then fill into a large bottle with the remaining candy and the rum. Seal, and place in a cool, dark place (not the refrigerator). Let the liqueur mature for 6 weeks, making sure to shake the contents occasionally.

The liqueur has developed its full flavor after 6 weeks, and is ready to be consumed. Strain the liqueur through a fine strainer to remove the berries and spices. Transfer into clean bottles.
