Coffee makes us awake and more efficient through caffeine. But it can do more. Researchers found out that this drink can protect us from cardiovascular diseases by keeping the vessels elastic and preventing calcification.

If you want to make the dessert a little lighter, replace half of the mascarpone with curd. In addition, it brings an extra portion of muscle strengthening protein. Another variant of the Christmas tiramisu is to replace the gingerbread with speculoos.

1 tablespoon Vanilla
8 ounces Mascarpone
½ organic Orange (zested and juiced)
1 pinch salt
6 ounces Gingerbread
7 tablespoons strong Coffee (brewed and chilled)
1 pinch Ground cinnamon
Ground cinnamon (for dusting)

Preparation steps

1.

Separate the eggs and beat the egg yolks until creamy with the vanilla and sugar. Stir in the mascarpone and orange zest. Whip the egg whites with the salt until stiff then fold in.

Crush the gingerbread. Mix the coffee with the orange juice and cinnamon.

Distribute approximately 1/3 of gingerbread between 4 serving glasses. Drizzle with orange coffee mixture then top with 1/3 of the mascarpone cream. Continue layering with the remaining gingerbread, coffee mixture and mascarpone cream. Chill fro at least 2 hours in the refrigerator.

Before serving, dust with cinnamon.
