For the cake
6 egg yolks
6 tablespoons sugar
2 teaspoons grated Lemon peel
4 egg whites
6 tablespoons Pastry flour
For the filling
8 ounces Milk chocolate couveture
8 ounces butter
4 ounces powdered sugar
2 tablespoons Cognac
For decoration
Chocolate star

Preparation steps

For the cake, beat the yolks with 1 tablespoon sugar and lemon zest until fluffy.

Whisk the egg whites with the remaining sugar until stiff and fold into the egg yolks, then sift the flour over the top and fold into the mixture.

Spread the batter into a lined baking tray and bake in a preheated oven at 180°C (approximately 350°F) for about 12 minutes. Remove the cake from the oven, let cool slightly and turn out from the baking sheet onto a kitchen towel sprinkled with some sugar. Remove the paper from the back cover with a damp kitchen towel.

For the filling, coarsely chop the chocolate and melt in a water bath, then let cool slightly.

Beat the butter with powdered sugar until fluffy and beat in the brandy and the melted chocolate.

Spread the cake with 2/3 of the chocolate icing and roll up using the kitchen towel.

7.

Using a piping bag with a star tip, decorate the cake to look like a log.

8.

Garnish the roll with sprinkles and chocolate stars, slice and serve.
