For the dough
9 ounces Pastry flour
1 egg
1 pinch salt
2 tablespoons vegetable oil
For the filling
2 lemons
3 ½ pounds tart Apple (such as Boskop)
7 ounces Ladyfinger
3 ½ ounces melted butter
5 tablespoons sugar
4 ounces raisins
1 teaspoon Vanilla
1 teaspoon Ground cinnamon
powdered sugar (for dusting)

Preparation steps

For the dough: Mix flour, egg, salt, oil and  3-3/8 fluid ounce of lukewarm water to a smooth dough. If dough does not hold together, add a bit more water. Shape dough into a ball and brush with oil. Cover and let it rest for 1/2 hour.

Preheat oven to 180°C / 350°F.

For the filling: Rinse lemons, finely grate peel, squeeze out juice and mix both together. Peel apples, cut into quarters and remove seeds. Cut crosswise into thin columns and soak in lemon juice. Crumble ladyfinger biscuits. Roll out dough on a floured surface, and then place a lightly floured kitchen towel over. Roll until very thin. Spread half of the melted butter on dough and sprinkle with crumbled ladyfingers. Place apples evenly over dough. Mix together sugar with raisins, vanilla sugar and cinnamon and sprinkle on top. Fold dough inward and roll up the strudel using the cloth. Place on a parchment paper-lined baking tray and brush with remaining melted butter. Bake in preheated oven for about 45 minutes.
