60 grams raisins
5 Tbsps Rum
350 grams Pastry flour
1 pinch salt
½ cube fresh Yeast (approximately 21 grams or .5 ounces)
50 grams sugar
140 milliliters lukewarm milk
70 grams butter
1 egg

4 Tbsps slivered almonds

Preparation steps

Soak raisins in rum.

Combine flour and salt in a bowl, create a well in the middle. Crumble yeast into well and mix with 1 tablespoon sugar and 5 tablespoons lukewarm milk. Sprinkle in some flour from the edge. Cover and let rise in a warm place for about 15 minutes.

Add butter, egg, remaining sugar and remaining milk to dough and knead with the dough hook of an electric hand mixer until smooth. Add more flour or milk if needed. Knead dough on a floured surface and add well-drained raisins.

Put dough back into bowl and let rise for another 45 minutes.

Preheat the oven to 180°C (approximately 350°F).

Divide dough into 3 equal portions and shape each portion into a strand, about 3 cm (approximately 1 inch) in diameter. Braid strands together and form a wreath. Squeeze ends together to seal. Place on a baking sheet lined with parchment paper. Brush with yolks and sprinkle with flaked almonds. Bake for about 40 minutes. Remove, let cool, slice and serve.
