Preparation steps

1.

Combine the flour, powdered sugar and lemon zest together on the working surface. Crack the egg in the center and distribute the butter around the mixture in pieces. Mix everything together, then knead with your hands into a firm dough. Wrap in plastic wrap and chill for about 1 hour.

Preheat the oven to 180°C (approximately 350°F). Line a baking sheet with parchment paper.

Roll out the dough until about 3-4 mm (approximately 1/8 inch) thin on a floured surface. Cut out the cookies in the shape of a lamb and place them on the baking sheet. Place on the middle rack of the oven and bake for about 12 minutes, or until golden.

Let the cookies cool on a wire rack.

For decorating: mix the powdered sugar with the lemon juice until thick.

Top each cookie with the glaze. Let dry.

7.

Melt the chocolate and use it to decorate the faces of the lamb cookies. Let harden.
