Preparation steps

1.

For the dough: Place flour on the work surface and create a well in the middle. Add pieces of butter, sugar, egg, salt and vanilla seeds to well. Knead into a smooth dough, then shape into a ball and wrap in plastic. Chill for about 30 minutes.

Preheat oven to 180°C (approximately 350°F). Line a baking sheet with parchment paper.

Thinly roll out dough on a floured surface. Use a cookie cutter to cut out rabbits. Place on the baking sheet and bake until golden brown, 10-12 minutes. Remove from oven and let cool.

For the decoration: Beat egg white and 1 teaspoon lemon juice until stiff. Beat in powdered sugar until glossy. Spread onto half of the cooled cookies and sandwich with another cookie. Pour remaining whites into a piping bag and use to decorate rabbits, as desired.

Let dry completely, then serve.
