Easter Bunny Cookies
These cookies are simple to make and fun to decorate for Easter.
This dough freezes well in the freezer for up to 3 months.
For the dough, sift the flour onto a work surface, make a well in the center and pour in the sugar, vanilla and egg. Cut the cold butter into pieces and distribute around the edge of the flour. Chop the ingredients with a pastry knife until crumbly, then knead quickly into a dough. Form into a ball, wrap in foil and refrigerate for 1 hour.
Grease a baking sheet with butter or cooking spray. Roll out the dough on a lightly floured work surface, dip the cookie cutter in flour and cut out bunny shapes. Place the cookies on the baking sheet and bake in a preheated convection oven at 180°C/ 350°F for about 10-15 minutes. Let cool on a wire rack.
For the icing, mix the powdered sugar with cream until smooth and decorate the rabbits. Pour the remaining icing into a freezer bag, cut a small hole in a corner and outline the body and face of the bunnies. Let dry, then serve.
