1 Earl Grey Tea bag
¼ cup Orange juice
1 cup boiling water
¼ cup butter
1 ¾ cups all-purpose flour
2 teaspoons Baking powder
¼ teaspoon salt
½ cup coconut sugar
1 egg (beaten)

Preparation steps

1.
Combine the raisins, tea bag, orange juice and boiling water. Cover and leave to stand for 30 minutes. Discard the tea bag.
2.
Heat the oven to 190°C (170° fan) 375°F gas 5. Grease a 23cm x 13cm| 9" x 5" loaf tin.

Sift the flour, baking powder and salt into a bowl and set aside.
4.
Beat together the butter and sugar in a mixing bowl until light and fluffy. Add the egg and stir well.

Gradually stir in the flour mixture until smooth, then add the tea and raisins and stir until just incorporated.
6.
Pour into the tin and bake for about 1 hour until golden and cooked through. Cool in the tin for 5 minutes, then place on a wire rack to cool completely.
