- 1 bunch rosemary (chopped)
- 1 ⅔ cups Dark chocolate (for cooking)
- 1.333 cups Milk chocolate (30% cocoa, chopped)
- 4 teaspoons Cognac
- ½ cup soft butter (chopped)
- 5 tablespoons cocoa powder

Place the cream and the rosemary in a pot and bring to the boil. Remove from the heat, cover and leave to steep for 20 min. Sieve into another pot and bring to the boil again.

Place the chocolate in a bowl and add the cream. Stir carefully until the chocolate has melted. Gradually stir in the cognac. Leave to cool and rest for at least 5 hours.

Gradually stir in the butter and transfer the mixture to a piping bag with a large nozzle. Pipe equal amounts onto a piece of baking paper (or use praline cases) and chill for 1 hour. Roll into balls, roll in the cocoa powder and store in a cool place.
