1 ⅛ cups butter
1 cup sugar (scant)
5 eggs (beaten)
3.333 cups all-purpose flour
3 tsps Baking powder
1 pinch salt
1 cup Cranberry
2 tsps grated lemon zest
1 cup milk

Preparation steps

1.
Preheat the oven to 160°C (140° fan) 325°F gas 3. Grease a large loaf tin.

Beat the butter and sugar in a mixing bowl until light and creamy. Beat in the eggs.
3.
Sift in the flour and baking powder and gently stir into the mixture.
4.
Gradually add the milk until the mixture is a soft, dropping consistency. You may not need all the milk.
5.
Stir in the cranberries and lemon zest until combined.
6.
Spoon into the loaf tin and bake for 35 minutes until risen and firm to the touch. Cool in the tin for 10 minutes, then place on a wire rack to cool completely.
