- For the dough
- 50 grams butter
- 1 pinch salt
- 150 grams Pastry flour
- 1 Tbsp sugar
- 1 generous pinch Baking powder
- 4 eggs
- To finish
- Frying oil (such as ghee)
- powdered sugar (for dusting)
Preparation
1.
Bring 250 ml of water (approximately 1 cup) to a boil with butter and salt. Stir the flour straight into the boiling liquid. Stir until the dough has a "white skin" and the base of the pan is "burned".

Pour the mixture into a mixing bowl. Add the sugar and baking powder and process with a hand mixer with dough hook. Add the eggs one at a time and process everything to a smooth, shiny dough.

In a wide saucepan, heat the oil or ghee. There should be so much fat that the dough balls can swim in it.

From the dough, form small balls with a teaspoon. Fry them in portions for 2-3 minutes until golden yellow.

Drain on paper towels.

Serve dusted with powdered sugar. Goes well with whipped cream.
