Preparation steps

1.
For the cake: heat the oven to 170°C (150° fan) 325°F gas 3. Have ready an ungreased 25cm|10" tube tin.

Sift 110g|1 cup sugar with the flour, cocoa, and salt and set aside.

Whisk together the egg whites, lemon juice, and vanilla in a mixing bowl until peaks form. Whisk in the remaining sugar until stiff peaks form (do not overbeat).

Slowly fold in the sifted dry ingredients until incorporated.

Put into the tin and spread evenly.

Bake for 45-55 minutes until springy to the touch. Invert the cake, still in the tin, onto a wire rack and leave to cool completely, upside down. When it is cold, place the cake onto a plate.
7.
For the glaze: heat all the ingredients in a pan over a low heat until the chocolate has melted. Stir until smooth and remove from the heat. Cool slightly to thicken.
8.
Spoon or pour the glaze over the cake, allowing it to run down the sides. Decorate with chocolate lattice pieces and leave to set.
