- 400 grams potatoes
- 200 grams Pastry flour
- ¼ cube Yeast
- 125 milliliters lukewarm water
- 3 eggs
- 1 pinch salt
- 1 l vegetable oil (for frying)
- 4 Tbsps sugar
Preparation steps

Peel the potatoes, rinse and cook in salted water for about 25 minutes. Drain and press through a potato ricer while still hot.

Sift the flour into a bowl.

Mix the yeast in the water until smooth and add to the flour. Mix with the potatoes, eggs, flour and salt, so that a soft dough is formed. Knead well and let rise for 40 minutes.

Heat the oil in a saucepan. Moisten a hand with water. With the other hand, remove some dough from the bowl and squeeze out about walnut-sized pieces of dough between your thumb and forefinger. Turn the dough with wet fingers while pushing with thumb and middle finger to make a hole in the center. Fry in portions, remove and drain on paper towels. Toss in sugar to coat and serve while still warm.
