500 grams Pastry flour
42 grams Yeast (1 cube)
200 grams lukewarm milk
50 grams sugar
5 egg yolks
60 grams softened butter
1 pinch salt
1 teaspoon grated Lemon peel
Pastry flour (for the pan and work surface)
Jam (to taste, as a filling)
1 ½ liters Fat (for cooking)
powdered sugar (for dusting)
mint (for garnishing)

Preparation steps

1.

Dissolve yeast with sugar in milk. Add flour, egg yolks, butter, salt and lemon zest to yeast mixture. Process mixture with a dough attachment of a hand mixer to make soft dough. Knead until dough leaves the sides of the bowl. Cover and let rise in a warm place until volume has doubled in bulk.

Knead dough on a floured surface vigorously, halve and shape into rolls. Cut each roll into 6 equal pieces, shape into balls and let rest for 30 minutes. Heat oil to 180°C (approximately 350°F) and cook donuts, few at a time, until golden brown on one side. Turn over and cook until the other side is golden brown as well.

Remove with a slotted spoon and drain on paper towels. If desired, fill with jam using a piping bag with a long, thin spout.

Dust donuts with powdered sugar and garnish with mint. Serve.
