42 grams Yeast
170 milliliters milk
500 grams Pastry flour
2 eggs
2 egg yolks
40 grams sugar
60 grams butter
salt
1/2, scraped Vanilla bean
1 liter Frying oil

Preparation steps

Crumble and dissolve yeast in 100 ml (approximately 1/2 cup) warm milk. Mix with 150 grams (approximately 5 ounces) of flour. Sprinkle with flour, cover and let rest for 20 minutes. Mix eggs, egg yolks and sugar with an electric mixer. Add to dough, along with remaining milk and remaining flour. Knead in butter, salt and vanilla. Cover and let sit at room temperature for 30 minutes.

Using a tablespoon, remove dough and shape into balls. Make about 20. Place on a cloth lightly dusted with flour. Flatten slightly with your hand and cover with cloth. Let rise again until volume has increased by three quarters.

Heat frying oil to 170°C (approximately 325°F) and add donuts in portions. Cook for 2 minutes, turn and cook for another 2 minutes. Donuts are done when there is a white ring in center. Place finished donuts on paper towels to drain. Fill a pastry bag with apricot jam and immediately use to fill donuts. Roll donuts in sugar, cool and serve.
