Preparation steps

Heat 100 ml (approximately 1/2 cup) of milk. Crumble and dissolve the yeast in the warm milk. Mix the yeast mixture with 150 grams (approximately 5.25 ounces) of flour. Dust with flour, cover and let rest for about 20 minutes. Knead in the eggs, egg yolks and sugar. Add the remaining milk, remaining flour, butter, salt and vanilla. Cover and let rest at room temperature for 30 minutes.

Use a tablespoon to form 20 dough heaps. Shape the heaps into balls and place on a lightly floured cloth. Flatten slightly and cover with a cloth. Let rise until the volume has increased by three quarters.

Heat the oil to 170°C (approximately 350°F). Fry the donuts for 2 minutes on each side. Remove from the oil and drain on paper towels. Immediately pour the apricot jam into a pastry bag with a long, fine nozzle. Inject each donut with the jam and roll in sugar. Serve warm.
