1 cube fresh Yeast (42 grams)
50 grams sugar
200 grams lukewarm milk
500 grams Pastry flour
1 egg
60 grams softened butter
1 pinch salt
½ teaspoon organic lemon zest
Pastry flour (for the desktop)

200 grams Jam (such as apricot or rosehip)
powdered sugar (for dusting)

Preparation steps

1.

Dissolve the yeast and sugar in the milk. Add the flour, egg, butter, salt and lemon zest. Knead into a smooth, firm dough. Cover and let rise in a warm place for about 40 minutes, until the volume has doubled.

Vigorously knead the dough on a floured surface. Roll out until 1-2 cm thick. Use a circle cookie cutter to cut out portions of the dough (about 6-7 diameter). Cover the dough and allow to rise for about 20 minutes.

Heat the oil in a large saucepan. Fry the donuts for 3-5 minutes, until golden brown on each side.

Remove the donuts from the oil and drain on paper towel. Pour the marmalade into a piping bag with a long, thin spout. Inject the marmalade into each donut. Serve dusted with powdered sugar.
