1 cube Yeast
170 milliliters milk
500 grams Pastry flour
2 eggs
2 egg yolks
40 grams sugar
60 grams butter
salt
½ Vanilla bean (seeds)
1 liter Frying oil
300 grams Apricot jam

Preparation steps

Warm 100 ml (approximately 1/2 cup) of milk and dissolve the yeast. Knead the yeast mixture with 150 grams (approximately 5.25 ounces) of flour. Dust with flour, cover and let sit for 20 minutes. Add the eggs, egg yolks and sugar. Mix well. Add the remaining milk, remaining flour, butter, salt and vanilla seeds. Cover and let rest at room temperature for about 30 minutes.

Use a tablespoon to form 20 dough portions. Shape the portions into balls and place on a lightly floured cloth. Flatten slightly and cover with a cloth. Let rise until the volume has increased by three quarters.

Heat the oil to 170°C (approximately 350°F). Fry the donuts for 2 minutes on each side. Remove from the oil and drain on paper towel. Immediately pour the apricot jam into a pastry bag with a long nozzle. Inject the donuts with the jam. Serve dusted with powdered sugar.
