Preparation steps

For the dough, mix the honey with the sugar and the butter, heat and stir until all ingredients are well combined. Allow to cool slightly, then add the egg and flour. Stir the potash and ammonium carbonate into the rum to dissolve, then stir the gingerbread spice into the mixture.

Preheat the convection oven to 160°C (approximately 325°F) and line a baking pan (about 12 x 20 cm) (approximately 5 x 8 inches) with parchment paper. Smooth the dough into the baking pan and bake in the preheated oven for about 15 minutes. Let cool, release from the pan and surround with a square cake ring.

Soften the gelatin in cold water. Warm the jelly in a small saucepan. In another small saucepan, melt the dripping wet gelatin over low heat. Mix with 1 tablespoon of jelly and finally stir all of the gelatin into the orange jelly. Pour into a bowl and allow to gel in the refrigerator for about 20 minutes. Spread onto the cake base inside the cake ring.

Roll the marzipan on a work surface dusted with powdered sugar to the size of the cake ring. Lay the marzipan over the jelly layer and press well. Place in the refrigerator and let it sit overnight.

The next day, melt the chocolate over a hot water bath. Remove the cake ring and cut the layered cake into cubes of 2-3 cm (approximately 1 inch). With a chocolate dipping fork, dip the cubes into the melted chocolate and allow to set on a wire rack. Serve after the chocolate has completely hardened.
