gluten-free all purpose flour (plus extra for dusting)

vegan Margarine (diced)

Apple (peeled and diced)

For the streusel
1 cup
Gluten-free flour (heaped)
¾ cup
chopped almonds
0.333 cup
½ cup
vegan Margarine (diced)

Preparation steps

1.
For the pastry: sift the flour, cornflour and baking powder into a mixing bowl. Rub in the margarine until it resembles fine breadcrumbs.
2.
Stir in the almonds and sugar. Stir in the milk a little at a time, until a soft dough. Wrap in cling film and chill for 30 minutes.
3.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease a 23cm-25cm|9"-10" tart tin or dish.

For the filling: toss the berries and apples with half the lemon juice.
5.
Mix together the tofu, remaining lemon juice, icing sugar, cornflour and the almonds until smooth.
6.
Roll out the dough on a lightly floured surface and line the tin.
7.
Spoon the tofu mixture into the pastry case, then top with the berry mixture.
8.
For the streusel: mix together all the ingredients with your hands until crumbly.
9.
Sprinkle on top of the fruit and bake for about 40 minutes until golden brown. Cool in the tin.
