xylitol (plus extra for dusting)

sugar-free seedless raspberry jam

Preparation steps

1.
Sift together the flour, baking powder, salt and cinnamon.
2.
Beat together the butter and xylitol until creamy.
3.
Add the hazelnuts and beat until well combined. Beat in the egg and vanilla.
4.
Work in the flour mixture until just combined. Divide the dough in half, shaping each half into a round flat disc. Wrap in cling film and chill for 2 hours until firm.
5.
Preheat the oven to 180°C (160° fan) 350°F gas 4. Line 2 large baking trays with non-stick baking paper.
6.
Roll out 1 disc of dough thinly between 2 sheets of non-stick baking paper. Cut out diamond shapes with a cookie cutter. Repeat with the remaining dough, rolling the trimmings only once.
7.
Place 2.5cm|1" apart on the baking trays.
8.
Bake for 10-15 minutes, until the edges are lightly browned. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
9.
Spread about 1 teaspoon of jam on half the diamonds and place the remaining biscuits on top.
10.
Dust half of each biscuit with a little xylitol.
