For the muffins
1 ¼ cups all-purpose flour
2 teaspoons Baking powder
½ teaspoon salt
½ cup butter (softened)
0.333 cup sugar
3 eggs
1 pinch Saffron
1 teaspoon vanilla extract
1 teaspoon grated Orange zest
For the decoration
2 cups powdered sugar
3 tablespoons lemon juice
blue Food coloring
small, fresh Flowers

Preparation steps

1.
For the muffins: heat the oven to 180°C (160° fan) 350°F gas 4. Place paper cases in 2 x 20 hole mini muffin tin.

Mix together the flour, baking powder and salt.
3.
Beat the butter and sugar in a mixing bowl until fluffy. Beat in the eggs, saffron, vanilla and orange zest.

Stir in the dry ingredients until just combined.
5.
Spoon into the paper cases and bake for 20 minutes until risen and firm. Cool in the tins for 5 minutes then place on a wire rack to cool completely.
6.
For the decoration: sift the icing sugar into a bowl and beat in the lemon juice and food colouring to form a thick smooth icing.
7.
Spread the icing over the cakes. Decorate with fresh flowers.
