2 eggs
2 Tbsps grainy Mustard
1 Tbsp grated Horseradish (fresh, or from a jar)
1 Tbsp cornstarch
vegetable oil (for frying)
Pastry flour (for dredging)

Preparation steps

1.

Rinse fish, pat dry and season with salt and pepper. Whisk eggs with mustard and horseradish. Dredge herring fillets in flour and tap off excess.

With a fork, pull fish through egg mixture. Drain slightly. In a pan, fry herring in hot vegetable oil until golden-brown. Drain on paper towels and serve immediately.
