Ingredients

10 grams fresh Yeast
100 milliliters lukewarm milk
250 grams Pastry flour
1 Tbsp honey
1 egg
1 pinch salt
40 grams melted butter
vegetable oil (for frying)

100 grams honey
60 grams sugar
For serving
200 grams Ricotta cheese
40 grams Pistachio

Preparation steps

For the balls: crumble yeast and dissolve in milk. Sift flour into a bowl, make a well in the center and add yeast mixture into the well. Mix yeast with honey and a little flour, keep in a warm place, covered, for 30 minutes. Add an egg, 20 grams (approximately 0.7 ounce) of butter and knead into a smooth dough, adding more flour so that dough leaves the sides of the bowl. Cover and let rise for another 30 minutes.

Knead dough briefly. Dip tablespoon into melted butter and remove small balls from the dough. Heat oil in a deep pan to 170°C (approximately 338°F) and fry dough balls, few at a time, for about 2-3 minutes or until godlen brown on all sides. Remove with a slotted spoon and drain on paper towel. Roll in sugar while still hot.

For the syrup: combine honey with sugar and 3-4 tablespoons of water, bring to a boil and reduce temperature. Simmer for 3-4 minutes. Remove from heat and let cool.

Drizzle dough balls with syrup and serve with ricotta and pistachios.
