For the cupcakes
1 ⅔ cups all-purpose flour
2 ½ teaspoons Baking powder
½ teaspoon baking soda
2 teaspoons ground cinnamon
2 cups grated Apple (mixed with 1 tbsp lemon juice)
1 egg
cup sugar
cup vegetable oil
1 cup Buttermilk
For the crumble topping
1 cup all-purpose flour
½ cup brown sugar
1 teaspoon ground cinnamon
½ cup butter
1.333 cups finely chopped almonds

Preparation steps

1.
For the muffins: heat the oven to 180°C (160° fan) 350°F gas 4.

Mix the flour, baking powder, bicarbonate of soda, cinnamon and apples in a mixing bowl.
3.
Whisk together the egg, sugar, oil, vanilla and buttermilk.
4.
Stir into the dry ingredients and stir until just combined.
5.
For the crumble topping: mix all the topping ingredients with your hands to form a crumble, rubbing in the butter well.
6.
Spoon the cake mixture into 12 flowerpot silicone muffin moulds and sprinkle the crumble on top.
7.
Bake for 20-30 minutes until golden. Cool in the moulds.
8.
Decorate with sugar flowers and leaves.
