3 ½ ounces Dark chocolate (70% cocoa solids)
2 teaspoons Rum
2 teaspoons Crème fraiche
4 egg yolks
2 tablespoons sugar
6 egg whites
1 tablespoon flour
powdered sugar

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Butter 6 souffle dishes and sprinkle with sugar.

Chop the chocolate and put into a heatproof bowl with the rum and the creme fraiche. Melt slowly over a pan of simmering (not boiling) water, then set aside and leave to cool.
3.
Beat the egg yolks with the sugar until creamy, then slowly pour in the melted chocolate, still beating.
4.
Sift the flour over the mixture and fold in. Beat the egg whites until they form stiff peaks and fold in carefully.
5.
Divide the mixture between the soufflé dishes and bake for about 15 minutes, until risen and puffy. Do not open the oven door while they are baking!
6.
Dust the soufflés with icing sugar and serve immediately.
