Ingredients
Date Almond Cookies
Pit dates and chop finely.
Coarsely chop the almonds.
Grind millet finely in a mini processor.
Rinse the orange half in hot water and wipe dry. Finely grate zest.
Peel ginger root and finely chop.
Mix dates, almonds, orange zest peel and ginger in a bowl.
Separate the eggs. Beat egg whites and 1 tablespoon cold water with a hand mixer until very stiff. Beat in yolks 1 at a time.
Gently fold into the date mixture the millet and wheat germ.
Drop the dough by tablespoons on 2 baking sheets lined with parchment paper. Bake sheets one at a time on the middle rack of a preheated oven at 300°F until cookies are light brown, 10-15 minutes. Let cool on a wire rack before serving.
