150 grams Dark couverture chocolate
250 milliliters milk
250 milliliters Whipped cream
6 egg yolks
50 grams sugar
4 centiliters Cognac

Preparation steps

Cut the nougat into small pieces and grate or chop the chocolate finely.

Heat the cream and the milk in a saucepan. Whip the egg yolks with the sugar until creamy in a bowl over a hot water bath. Remove from the heat. Add the hot cream milk into the egg yolk mixture, put back over the water bath, and stir until creamy (do not boil). Remove from the heat, stir in the chocolate with nougat and melt. Pour the cognac and stir over a cold water bath. Transfer the mixture into an ice cream machine or freeze in a flat metal dish in the freezer, stirring regularly.

Fill the ice cream into the chocolate shells. Serve as desired garnished with gold dust and edible flowers.
