Dark and White Chocolate Apricot Confection
Chop 3-4 dried apricots into very small cubes. Puree remaining apricots with apricot liqueur and a little apple juice, if needed, until mixture is thick and creamy. Place apricot puree in a piping bag with a small tip and pipe into white chocolate shells.
Chop chocolate coarsely and melt. Let cool a little and pour about a teaspoon of melted chocolate over chocolate shells, so that apricot puree is completely enrobed. Garnish each with chopped apricot pieces and grated coconut before chocolate dries. Set aside to dry. To serve, place each confection in paper candy cup.
