Nutritional values

The raisins, which are rich in fibre, ensure a constant blood sugar level, saturate for a long time and therefore do not allow ravenous appetite. Especially the fibre pectin from the apples is not only beneficial for digestion, but also has a balancing effect on diarrhoea and constipation.

Try pears instead of apples - they bring a mild sweetness to the dish. If the sweetness of the fruit is enough to go with the poffertjes, you can do without the honey and thus save sugar.

For the batter
150 grams Pastry flour
½ teaspoon Baking powder
2 eggs
300 milliliters milk
2 tablespoons melted butter
2 tablespoons sugar
40 grams raisins
1 centiliter Apple brandy
For the filling
2 tart, firm Apple
40 grams butter
40 grams sugar
½ teaspoon cinnamon
1 pinch salt
For finishing
melted butter (for the baking dish)
40 grams slivered almonds
powdered sugar (for dusting)
How healthy are the main ingredients?

Preparation steps


For the batter, mix the flour, a pinch of salt and baking soda. Separate the eggs. Whisk egg yolks with milk and melted butter. Stir the milk mixture into the flour mixture. Beat the egg whites until stiff. Sprinkle with sugar and beat again until stiff. Fold the egg whites into the batter. 


Soak the raisins in some warm water.


For the filling, peel the apples, quarter, core and cut into small cubes. Melt the butter in a hot pan, Stir together the sugar, cinnamon, salt and sprinkle over the apples. Simmer for 1-2 minutes until soft. Remove from heat and let cool.


Drain the raisins and chop finely. Stir the raisins and brandy into the batter. 


For finishing, heat an Ebelskiver pan over medium heat and grease the wells with the melted butter. Sprinkle each with a few almonds and fill halfway with the batter. Place about 1 teaspoon of the filling on top and cover with batter. Let the fritters brown slightly for 1 to 2 minutes. Use a wooden skewer to flip the fritter in the Ebelskiver pan. Cook until golden brown on the other side. 


Continue with the remaining batter. Dust with powdered sugar and serve warm.
