For the pastry
Dough (for a 22 cm springform pan)
300 grams Pastry flour
100 grams sugar
200 grams butter
1 pinch salt
1 egg yolk
For the topping
750 grams Red Currants
4 egg whites
150 grams sugar
150 grams ground almonds

Preparation steps

For the pastry: Sift flour on the work surface. Make a well in the center and add an egg yolk to the well. Cut butter into small pieces and arrange around the well. Chop all ingredients with a knife until crumbly and quickly knead into smooth pastry. Shape into a ball and wrap in foil, refrigerate for 30 minutes.

Butter springform pan. Roll out pastry on a floured surface and line pan with it, making an edge all around. Prick with a fork several times and bake in preheated oven at 175°C (approximately 350°F) for about 15 minutes.

For the topping: Rinse and clean currants, drain well in a colander. Beat egg whites until very stiff and gradually add sugar, beating constantly. Carefully fold almonds and currants into meringue. Spread mixture on the pastry and bake in preheated oven at 180°C (approximately 350°F) for about 25 minutes or until meringue is lightly browned. Remove from the oven and serve cold.
