For the batter
200 grams Semolina flour
75 grams Pastry flour
2 tsps Baking powder
2 eggs
100 grams sugar
1 pkg Vanilla sugar
2 Tbsps Orange liqueur
1 tsp grated Orange peel
250 milliliters milk
50 grams butter
200 grams Currants
vegetable oil (for the pan)
For the topping
4 Tbsps Whipped cream
4 Tbsps powdered sugar
1 Tbsp Crème de cassis

Preparation steps

1.

Preheat the oven to 180°C (approximately 350°F). Grease a muffin tin with oil and chill.

For the batter, mix the semolina, flour and baking powder.

Beat the eggs, sugar, vanilla sugar, orange liqueur, orange zest, milk and butter. Gradully mix in the flour mixture. Fold in the currants.

4.

Pour the batter into the muffin tin and bake for about 30 minutes. Remove from the oven and cool on a wire rack.

5.

For the topping, mix the cream, powdered sugar and creme de cassis until smooth. Coat the muffins with the icing, let dry and serve.
