Ingredients

Preparation steps

1.

Beat the butter with the sugar until frothy and stir in the egg. Mix the two flours with the nuts, baking powder and spices in a bowl. Gradually add the flour mixture into the butter mixture. Mix with a rubber spatula, and then knead with hands until smooth. Shape into a ball and refrigerate, wrapped in plastic wrap, for 30 minutes.

Preheat the oven to 180°C (approximately 350°F).

Roll out the dough between 2 layers of plastic wrap to 0.4 cm (approximately 1/10 inch) thin. Using a Linzer Cookie Cutter, cut out circle shapes (about 4 cm diameter) (approximately 1.5 inch). Knead the remaining dough again, roll out, and cut more circles.

Place the dough circles on a baking sheet lined with parchment paper and cut out a small circle from the center of the circles in the middle rows of the sheet (about 1.5 cm diameter) (approximately 1 inch). Bake in preheated oven for about 10 minutes.

Remove the finished cookies from the oven, loosen the parchment paper from the tray and leave to cool.

Sprinkle the cookies with the center holes with powdered sugar. Coat the whole cookies with slightly warmed jam . As desired, cover a jam cookie with a powdered sugar cookie and press on gently. Allow to dry and serve.
