375 grams Pastry flour
1 tsp Baking powder
200 grams sugar
1 packet Vanilla sugar
250 grams butter
1 egg yolk
4 Tbsps Whipped cream
120 grams ground almonds
150 grams Red currant jelly

Preparation steps

Knead together flour, baking powder, sugar, vanilla sugar, pieces of butter, egg yolk, cream and ground almonds. Shape into a ball, wrap in plastic and chill for about 1 hour 30 minutes.

Remove and roll out to about 0.5 cm (approximately 1/6 inches) thick on a floured surface. Use a round cookie cutter with crimped edges to cut out disks of dough. Cut out small hearts in the center of half the disks of dough.

Place dough on a baking sheet lined with parchment paper. Dust dough with hearts with coarse sugar. Bake in an oven preheated to 180°C (approximately 350°F) for about 8 minutes. Remove and let cool.

Heat up jelly and spread onto whole cookies. Top with remaining cookies, press down slightly and let dry. Serve at room temperature.
