175 grams butter
150 grams sugar
4 eggs
1 organic Lime (Juice and zest)
175 grams Pastry flour
40 grams ground almonds
½ tsp Baking powder
For the frosting
120 grams softened butter
60 grams sugar
120 grams cream cheese
1 Tbsp Raspberry syrup
150 grams powdered sugar
For decoration
pink sugar
white sprinkle
Sugar pearls (white and pink glossy)

Preparation steps

1.

Preheat oven to 180°C (approximately 350°F). Line wells of a muffin tray with paper liners.

For the cupcakes, cream butter with sugar until fluffy. Beat in eggs, lime juice and lime zest. Add flour, almonds and baking powder. Mix well. Pour batter into cupcake liners and bake for 25 minutes or until golden brown. Remove from oven and cool.

For the frosting, mix butter with sugar until creamy. Stir in cream cheese and syrup. Add powdered sugar until a spreadable consistency is reached. Place in a piping bag with a serrated nozzle and pipe icing on top of cupcakes. Decorate with sugar, sprinkles and sugar pearls. Serve.
