For the Cupcakes
150 grams softened butter
150 grams sugar
3 eggs
1 organic lemon (Juice and zest)
175 grams Pastry flour
½ tsp Baking powder
For the frosting
120 grams softened butter
60 grams sugar
120 grams cream cheese
150 grams powdered sugar
12 Maraschino cherry

Preparation steps

1.

Preheat oven to 180°C (approximately 350°F). Line wells of a muffin tray with paper liners.

For the cupcakes, cream butter with sugar until fluffy. Beat eggs with lemon juice and zest. Add to butter mixture along with flour and baking powder. Mix well and pour batter into paper liners. Bake for 25 minutes or until golden brown. Remove from oven and cool.

3.

For the frosting, cream butter with sugar until creamy. Add cream cheese. Add powdered sugar slowly until frosting has reached desired consistency. Place in a piping bag with a serrated nozzle and pipe onto cupcakes. Top each cupcake with a cherry and serve.
