Cucumber Filled with Feta Cheese and Quark
In a bowl, mash the feta with a fork and mix with the quark and lemon juice. Rinse the chile, slit lengthwise, remove the seeds and white ribs and cut into small cubes. Peel the garlic and squeeze through a garlic press into the feta cheese mixture. Add the chile, curry powder, chives and parsley. Season with salt and pepper.
Rinse cucumber and with a channeling knife, make stripes down the length of the cucumber, if desired. Trim the ends. Cut the cucumber into 8 cm (approximately 3 inch) lengths. Scoop out the flesh. Spoon the feta mixture into the cucumber, wrap in foil and refrigerate until the feta cheese filling is firm, 1-2 hours.
To serve, remove the foil and cut the cucumber into 2 cm (approximately 3/4-inch) thick slices. Serve on lettuce leaves and garnish with sprouts.
