Crusty Bread with Sunflower Seeds
Crush spices in a mortar, mix with flour and salt in a bowl and make a well in the center. Crumble yeast and combine with about 150 ml (approximately 3/5 cup) of lukewarm water, add to the well and dust with flour. Cover and let rise for 15 minutes in a warm place. Add sugar, bread spices, leaven and 750 ml (approximately 3 cups) of lukewarm water, knead with your hands or dough attachment of an electric hand mixer to a smooth dough. Cover and let rise for another 60 minutes in a warm place.
Water clay pot and butter pot, sprinkle with a little flour. Knead dough on a floured surface again, shape into a loaf and place into the clay pot. Sprinkle with sunflower seeds and firmly press them in. Replace the lid and let stand for 1 hour. Place into a cold oven and turn oven temperature to 150°C (approximately 300°F) and bake bread for about 3 hours. Then increase oven temperature to 200°C (approximately 400°F) and bake for 45 minutes more. Remove from the oven and serve as needed.
