7 ounces Spaghetti
1 scallion (trimmed and chopped)
1 green chile pepper (washed and cut into rings)
½ cup fresh goose crackling
1 tablespoon Goose fat
2 tablespoons roasted, chopped Peanuts
salt
freshly ground peppers
1 tablespoon finely chopped cilantro
½ Lime (cut into wedges)

Preparation steps

Cook the pasta in plenty of boiling salted water until al dente, reserving 125 ml of the cooking water, then drain thoroughly.
2.
Meanwhile, heat the goose fat and sweat the spring onions and chilli rings for about 2 - 3 minutes. Add the crackling and peanuts and heat through. Season with salt and pepper and mix with the drained pasta and the reserved cooking water.
3.
Serve on plates, garnished with coriander and lime wedges.
