Crumpets with Cream Cheese and Jam
For the crumpet dough: Place the flour in a bowl, make a well in the center, add the crumbled yeast, sugar and 2 tablespoons milk to the well and mix until combined. Sprinkle with a little flour, cover and let rise in a warm place for about 30 minutes. Add the salt and remaining milk and mix until smooth. Cover and let rise in a warm place for another 30 minutes.
Melt some butter in a hot frying pan, add buttered crumpet rings (about 8 cm diameter) (approximately 3 inches), fill about 1 cm (approximately 3/4 inch) high with batter and cook until bubbles form on the surface. Remove the rings, flip the crumpets over and cook until golden brown. Remove from the pan and keep warm. Repeat with the remaining batter.
Serve with cream cheese and jam.
