250 milliliters
650 grams Pastry flour
60 grams sugar
1 pinch salt
2 eggs
175 grams butter
4 tablespoons honey (60 grams)
1 kilogram Mirabelle plum
1 teaspoon powdered sugar

Preparation steps

1.

Dissolve yeast in milk. Add 80 grams (approximately 2 3/4 ounces) of flour and 1 pinch of sugar, mix until thick paste forms and let stand, covered, for about 30 minutes.

Mix 420 grams (approximately 15 ounces) of flour with remaining sugar and 1 pinch of salt, make a well in the center and add beaten eggs and 50 grams (approximately 1 3/4 ounces) of butter into the well. Add yeast mixture and knead to a smooth dough. Cover and let rest for about 1 hour.

Combine remaining butter with remaining flour, 1 pinch of salt and honey, mix until crumbly with your fingers. Rinse, dry and pit plums.

Knead dough well and roll out on a floured surface. Line baking sheet with dough and brush with 25 grams (approximately 3/4 ounce) of butter. Arrange plums on top and srpinkle with crumble. 

5.

Bake cake in a preheated oven at 200°C (fan oven 180°C; gas mark 3) (approximately 400°F) for about 30 minutes or until golden brown. 

6.

Cool and dust with powdered sugar. Serve.
