2 tablespoons melted butter
100 grams Pastry flour
salt
1 tablespoon sugar
150 milliliters milk
100 milliliters water
2 eggs
50 grams clarified butter (for frying)
For the filling
120 grams ground Walnut
150 milliliters milk
1 packet Vanilla sugar
2 tablespoons Rum
also
30 grams coarsely chopped Walnut
powdered sugar (for dusting)
Cherries (for garnish)

Preparation steps

In a bowl, whisk together melted butter, flour, a pinch of salt and sugar. Add milk, water and eggs and whisk until smooth. Let batter rest about 30 minutes.

Toast ground walnuts in a dry pan. Stir in milk and vanilla sugar and bring to a boil. Simmer, stirring constantly until slightly thickened, about 4 minutes. Stir in rum.

Whisk batter again. Heat a little clarified butter in a pan until hot. Pour in batter. Swirl pan until it is evenly coated with a thin layer of batter. When the top of the crepe appears dry, flip and cook until golden-brown the other side. Repeat process until all batter is used up.

Keep finished crepes warm in the oven (70°C or approximately 175°F).

To serve, sprinkle crepes with walnut filling and roll up. Arrange rolled crepes on plates and sprinkle with powdered sugar and chopped nuts. Serve garnished with cherries.
