For the batter
2 eggs
300 milliliters milk
150 grams Pastry flour
1 tablespoon sugar
butter (for cooking)
100 grams Rosehip jam
For the sauce
2 Tangerines
2 tablespoons sugar
2 tablespoons butter
4 centiliters Apricot liqueur
120 milliliters Apricot juice
powdered sugar (for dusting)

Preparation steps

1.

For the batter: Whisk the eggs, milk, flour and sugar until smooth and set aside for about 20 minutes.

For the sauce: Peel the mandarin oranges and cut into pieces. Place the sugar and butter in a pan, caramelize the sugar then deglaze with the liqueur. Add the juice and mandarin oranges then remove from the heat. 

3.

For the crepes, heat a little butter in a frying pan and individually cook 8 thin crepes. Spread jam over the crepes and fold into triangles.

4.

Place the crepes in the sauce, gently heat then arrange on serving plates. Serve dusted with powdered sugar.
