0.333 cup short grain Rice pudding
2 cups Whole milk
¼ teaspoon vanilla extract
2 teaspoons sugar

Preparation steps

Put the rice, milk, vanilla extract and sugar, if using, into a small pan.

Bring to the boil and simmer very gently for about 25 minutes, stirring frequently.

When the rice is very soft, remove from the heat and leave to cool. This as necessary with more milk.

Rice pudding with mango:

Cook the rice as above omitting the sugar if using. Peel and stone 1 small ripe mango and purée the flesh using a hand blender. Stir the mango purée into the cooled rice pudding.
