Creamy Quark with Oranges and Peaches
Drain the quark through a sieve. Soak the gelatine in a bowl of cold water until soft, about 10 minutes. In a bowl, stir the quark with 30 grams (approximately 2 tablespoons) of the sugar, vanilla and lemon zest. Dissolve the gelatine in a pot set over medium heat. Stir into the quark. In a bowl, beat the cream until stiff. Gently fold into the quark and allow to cool.
Rinse the oranges, wipe dry and grate zest. Peel the pith from the oranges. Cut the oranges in half and thinly slice.
Drain the peaches.
Heat the butter in a skillet. Add the sugar and cook until caramelized. Add the orange zest. Stir in the orange slices, peaches, peach juice and orange liqueur, and cook briefly.
Stir the oranges and peaches into the quark. Serve in bowls garnished with the orange zest.
