2 tablespoons mild Curry powder
3 tablespoons olive oil
2 tablespoons butter
1 onion (finely chopped)
3 Apple (peeled and cut into chunks)
1 ½ cups chicken stock
1.333 cups double cream
2 teaspoons Dijon mustard

Preparation steps

1.
Toss the pork with the curry powder and leave to marinate for 30 minutes.

Heat half of the oil and butter in a saucepan and sear the pork on all sides. Remove the pork from the pan and add the rest of the oil and butter, followed by the onion and apple.
3.
Sauté for 5 minutes, then pour in the stock and cream and bring to a simmer. Transfer the pork back to the pan then simmer very gently for 1 hour. Stir in the mustard and season to taste with salt and pepper.
