1 cup black currant
2 cups Mascarpone (at room temperature)
cup Cointreau
1 cup whipping cream
¼ cup caster sugar
2 teaspoons vanilla extract

Preparation steps

1.
Mix together 1 tsp of vanilla extract with the Cointreau. Soak the ladyfingers in this mixture.
2.
Sprinkle a few blackcurrants into the base of a 30cm x 10cm ceramic baking dish.
3.
Layer the soaked ladyfingers in rows of 4 on the base.

In a large mixing bowl, whip together the cream, caster sugar and remaining vanilla extract to soft peaks using an electric hand held whisk.
5.
Fold a third into the mascarpone to lighten it, then fold the rest in. Spread half of this on top of the ladyfingers and smooth. Chill for 20 minutes.
6.
Arrange the remaining ladyfingers in rows of 5 on top of the chilled mascarpone and whipped cream mixture.
7.
Spread the remaining mascarpone and whipped cream mixture on top and sprinkle the remaining blackcurrants evenly on top. Chill for a further 30 minutes before serving.
