1 clove garlic (sliced)
1 handful thyme
1 unwaxed lemon (juiced, zest grated)
7 ounces Salmon fillet (in one piece, with skin)
1.333 cups smoked Salmon (chopped)
1 scallion (sliced)
1 tablespoon fresh Dill (chopped)
2 tablespoons soft butter
¼ cup Crème fraiche

Preparation steps

1.
Mix together the garlic, thyme and lemon zest and place half the mixture in a steamer.
2.
Place the salmon on top, season with salt and ground black pepper and cover with the remaining thyme mixture. Cover with a lid and steam for 8-10 minutes.
3.
Mix together the smoked salmon, spring onion and the dill and add a little of the lemon juice.
4.
Leave the steamed fish to cool, remove the skin and flake the meat. Mix with the butter and crème fraîche until creamy and fold in the smoked salmon mixture.
5.
Season to taste and arrange on plates with the help of serving rings.
