For the cake
225 grams Pastry flour
175 grams sugar
100 grams butter
4 eggs
1 packet Baking powder
For the cream
500 grams cream cheese
250 grams Mascarpone
400 milliliters Whipped cream
5 sheets gelatin
75 grams sugar
6 centiliters Maraschino liqueur
cocoa powder (for dusting)

Preparation steps


For the cake, mix flour with baking powder. Melt butter. Beat eggs with sugar until fluffy and white. Add butter slowly, alternating with flour mixture. Spread onto a baking sheet lined with parchment paper and bake in a preheated oven at 180°C (approximately 350°F) for 35 minutes. Remove and cool. Remove from baking sheet and cut in half crosswise. Cover.


For the cream, soak gelatin in cold water. Mix cream cheese with mascarpone and sugar until smooth. Whip cream until stiff with stabilizer. Express gelatin and heat with maraschino liqueur in a pot until dissolved. Stir in a small amount of cream cheese mixture until combined and then pour back into cream cheese mixture. Fold in whipped cream. Spread some cream onto a cake layer. Smooth and top with second cake layer, pressing gently. Cover with remaining cream, making a wavy pattern. Chill for 2 hours. To serve, dust with cocoa powder and slice.
